1/4 Beef (Split Side)

Our beef is dry-aged for a minimum of 10 days. A split side contains the following: Steaks: T-Bone 3-5 Lbs, NY Strip 1.5 - 2 Lbs, Rib Steak 6-7 Lbs, Top Sirloin Steak 3-5 Lbs, Cube Steaks 2-3 Lbs, Skirt OR Flank 1 Steak, Tenderloin 1.25 - 1.75 Lbs Roasts: Sirloin Tip 3-4, Top Round Roast 3 Lbs, Tri-tip Roast 1-2 Lbs, Pot Roasts 13-15 Lbs Slow-Cook meats: Short Ribs 3-5 Lbs, Soup Bones 6-8 Lbs, Stew Meat 2-4 Lbs, Brisket 2 Lbs Ground Beef (40 x 1 lb packages).
