Beef Side (1/2)

The beef side is fully customizable, but is typically cut as follows: Steaks 1-1/4" thick, T-Bone Steak 6-10 lbs, Rib Steak 12-14 lbs, Sirloin Steak (6-10 lbs), Cubed/Round Steak (4-6 lbs), Chuck Roast (3-4 x 3 lb, roasts), Shoulder Roast (3-4 x 3 lb roasts), Rump Roast (3 x 3 lb roasts), Sirloin Tip (3 x 3 lb packages), Stew Meat (4-6 lbs), Short Ribs (2 x 3 pieces), Ground Beef (80 x 1 lb packages) Before your beef is cut, you will receive a cut sheet for specific instructions. Our cattle are a special angus-cross, and the beef is dry-aged for a minimum of 10 days.
